ZUCCHINI AND SAUSAGES 
4 med. zucchini, shred unpeeled on the largest size hole in shredder (approximately 3 cups)
2 pkgs. sweet Italian sausage
2 (28 oz.) cans of crushed tomatoes
1/4 c. lemon juice
1 1/2 tbsp. oregano
3/4 c. Parmesan cheese
Salt to taste

Cook sausages in large sized electric fry pan. Set aside to cook. Reserve fat. Add shredded zucchini and cook only to soften in the reserved fat. Add 2 cans of crushed tomatoes. Simmer low. Add salt, lemon juice and oregano. Slice cooled sausages and add to fry pan. Add Parmesan cheese and continue to simmer for 5 minutes. Serve on cooked spaghetti. Serves 8. Can be made ahead of time and reheated.
