MOZZARELLA CHICKEN 
6 boneless, skinless chicken breasts
2 sm. cans sliced mushrooms, drained or 3/4 c. fresh mushrooms, sliced
2 eggs
Olive oil and/or butter
Seasoned bread crumbs
Chicken broth and/or white wine
1 c. Mozzarella cheese, sliced or grated

Cut chicken in bite sized pieces. Beat eggs. Marinate chicken in eggs in refrigerator for 2 hours. Roll in bread crumbs and brown in oil and/or butter. Place half of chicken in casserole. Top with half of the mushrooms, then half of the cheese. Repeat the layers. Pour chicken broth and/or wine on the top (about 1/2 to 3/4 cup). Bake at 350 degrees for 30 minutes, covered, then 30 minutes, uncovered.
