A SIMPLE CURRY SAUCE
This is excellent for dressing up leftovers or for using when making casseroles.

1 tbsp. curry powder
1 tbsp. flour
1 tbsp. butter
1/2 tsp. salt
1 cup whole milk or coconut milk

Rub together butter and flour until mixed. Stir in curry powder. Melt this slowly in milk, stirring until dissolved to avoid lumps. (If lumps happen, process in a blender until smooth).

Use this very basic and easy to prepare sauce to heat cooked and cleaned shrimp, lobster or crab meat (cooked - both imitation and real) or chicken.

Taste and add salt and pepper, as needed (the full amount of the salt may not be required).

Very simple to make and tasty. I changed it up a bit and added more curry powder, a whole can of coconut milk, a teaspoon of cumin and a little bit of chicken stock. My family loved it!

A simple roux, but a great base. I substitute the butter with duck fat or bacon fat.

Brilliant recipe! Same sauce as I tasted in an expensive Indian restaurant! It's good to add simply to boiled rice as completed gravy.

Cracking recipe for Butter Chicken.... may need to back off on the flour and curry powder for a more mild curry. Very easy to prepare.

Yes, it is so easy to make. Lumps do not need to happen. How? Put all the ingredients from the list together in a pan (except the milk), and mix them with a fork until a smooth paste is obtained. Then, heat it gently, adding the milk little by little. Guaranteed: no lumps.

I have been cooking curries for more than 40 years, making the sauces the long laborious way, so I was a bit sceptical about this recipe. It does infact make a remarkably good curry sauce, easy to adjust the flavours and wonderfully quick and simple to make.

You need a good curry powder for this to have any flavor. I used chief and still had to add more curry powder, garlic powder, cumin, fennel and smoked paprika. I used almond milk for the base and warmed it up slow until it reached the thickness I wanted. Nice base. Used it over baked tilapia with green pepper and onion
