SWEET POTATO CASSEROLE 
8 lg. sweet potatoes, peeled, quartered, boiled just to soften, drained
3 c. granulated sugar
1 c. unsalted butter, does not work well with substitutes
6 eggs, beaten
1 tbsp. vanilla
1 c. milk, 1% is best

Topping:

5 c. light brown sugar
1-1/2 c. all purpose flour
3/4 c. unsalted, butter, softened
3 c. crushed, unsalted saltine crackers

Heat oven to 350°F. Spray baking dish/dishes with canola oil spray. In a large bowl combine together first 6 ingredients. Fill baking dishes 3/4 full of potato mix. In a large bowl combine last 5 ingredients. Cover the top of potato mix in baking dish with topping mix 1/2 inch thick.

Bake at 350°F for 15 minutes or until top is slightly crunchy.
