SWEET POTATO BAKE | |
3 lg. sweet potatoes, cooked and mashed 1/4 c. melted butter 1/2 c. dark brown sugar 1/2 c. coconut 1/2 c. chopped pecans 1/4 c. dark rum 1 tsp. vanilla extract 6 lg. marshmallows, quartered Combine all ingredients except marshmallows. Spoon into lightly greased 1 1/2 quart casserole. Bake uncovered at 325 degrees for 45 minutes. Arrange marshmallows on top. Continue baking until they are browned. Serves 6. |
