ZUCCHINI SURPRISE 
1 med. banana
1 med. onion
1/4 tsp. salt
1/2 tsp. garlic powder or use fresh
1 med. eggplant
Pepper to taste
butter, as much as you dare (optional)

Peel and cut eggplant into 1 inch chunks. Slice banana in half lengthwise and cut up. Mix all ingredients in a saucepan and add just enough water to cover. Simmer until eggplant is fork tender.

Guests will ask you what you did to make the zucchini tasty. They will be surprised that its not zucchini. They will turn green when they find out they've been eating COOKED banana!
