OAT BRAN MUFFINS 
2 c. oat bran cereal
1/4 c. brown sugar
2 tsp. baking powder
1/2 tsp. salt
1 c. low-fat milk
2 egg whites, slightly beaten
1/4 c. honey
2 tbsp. vegetable oil

Heat oven to 425 F. Line 12 muffin cups with paper baking cups or grease bottom only with shortening. Combine dry ingredients. Add milk, egg whites, honey and oil; mix just until ingredients are moistened.

For variety, can add any one of the following:

RAISIN NUT MUFFINS:

1/4 c. raisins
1/4 c. nuts

BANANA NUT:

1/2 c. mashed banana
1/4 c. nuts

BLUEBERRY MUFFINS:

1/2 c. fresh or frozen blueberries

APPLE CINNAMON:

1/2 c. chopped apple
1 tsp. cinnamon
1/4 c. nuts

Bake 15 to 17 minutes. (Makes 1 dozen muffins.)
