EDITH'S SAUSAGE BREAD | |
1 lb. loaf frozen yeast bread (comes 3 to a pkg.) 1 (1 lb.) loaf of hot bulk sausage (such as Owens) 1 c. chopped bell pepper 1 c. chopped onion 1 c. sliced ripe olives (2 sm. cans) 1 c. chopped mushrooms & stems (2 sm. cans) 1 1/2 c. shredded cheddar cheese 1 1/2 c. shredded mozzarella cheese 2 tbsp. chopped jalapeno peppers, optional Remove 1 loaf from the frozen package. Smear butter all over it and place covered in the refrigerator to thaw out overnight. After that chop up the bell pepper, onion and place in covered small bowls. Open and drain the olives and mushrooms and place them into small covered bowls like tupperware. If you grate your own cheese, place it into containers that are covered, also. Likewise the jalapeno peppers. The next evening, take the sausage and pinching into small pieces place in a skillet to brown. When lightly browned, remove to drain on a brown grocery sack covered with some paper towels. Then take a piece of foil about 16 inches long and place the top half of it on work counter, letting the bottom half hang over the counter. Take some soft butter and smear some lightly all over the top half of the foil. Cut the dough in half crosswise and smearing a little more butter on it place on the foil and using your hands push and pat the dough into as large a rectangle as possible without pulling it apart and into holes. If it tears, pinch it back together and do not pull anymore. Sprinkle half of the meat down the middle of the dough, then follow with the pepper, onion, olives, mushrooms and last the cheeses. Sprinkle a little salt and pepper on now if you like followed with the jalapeno peppers if you want them. Fold the bottom of the dough up and over the mixture and take the top of the dough and fold it over the lower half that is already folded, pinch to close and fold over the ends and pinch them closed. Smear some soft butter all over the loaf. Slide the foil up and pinch up about an inch of the foil to separate the two loaves. Proceed with the other half of the dough like you did the first half. Slide all onto a cookie sheet or jelly roll cake sheet. Place into a preheated 350 degree oven to bake. Watch and when it browns just slightly (about 15-20 minutes) slide out of oven and smear some more butter all over the 2 loaves. Put back into oven and allow to continue to bake until golden brown all over. Remove from oven and let cool slightly and serve while hot. Will freeze well. Can be reheated in microwave for 30 seconds on high. Note: I have tried this with ground meat and turkey and it is still delicious. |
