ZUCCHINI BUNDT PINEAPPLE AND NUT
CAKE
 
3 eggs
1 c. salad oil
2 c. white sugar
2 c. shredded zucchini
1 c. drained pineapple
3 c. flour
2 tsp. baking soda
1/2 tsp. baking powder
1 tsp. salt
1 1/2 tsp. cinnamon
3/4 tsp. nutmeg
2 tsp. vanilla
1 c. walnuts, cut up

Beat eggs; add oil and sugar and beat until creamy. Add zucchini and pineapple and vanilla alternately with the dry ingredients. Then stir in nuts. Bake in 4 small loaf pans greased and floured. Bake 45 minutes at 350 degrees. Test to see if done.
