HARVARD BEETS 
1 tbsp. cornstarch
1/3 c. sugar
1/4 c. water
1/4 c. vinegar
1/2 tsp. salt
2 c. sliced beets, cooked
1 tbsp. grated orange rind
2 tbsp. butter, melted
1/4 c. orange juice

Blend cornstarch and sugar. Stir in water, vinegar, salt and bring to boil. Stir constantly. Add beets and orange juice, simmer 15 minutes.

Ready to serve. Put in butter and bring to boil. Add orange rind, for a magic touch.
