SHELL SALAD CAMPAGNIOLI 
1 lb. med. size shell macaroni (use half white, half green if available)
1 tbsp. olive oil
1 lg. or 2 sm. very ripe tomatoes
1 med. size red onion
1 red & 1 green bell pepper
1 shallot, minced
1 c. mayonnaise
2 tsp. soy sauce
1/4 c. sweet cucumber relish (opt.)
1 tbsp. tarragon vinegar
Salt & freshly ground pepper
Fresh dill & cherry tomatoes for garnish

Cook macaroni according to package instructions. When done, drain thoroughly, rinse with cold water and drain again. Toss with 1 tablespoon olive oil and set aside. Peel and seed tomatoes and chop fine. Chop onion and seeded peppers into 1/4 inch pieces.

Combine shallot, mayonnaise, soy sauce, relish and vinegar and mix well. Add salt and pepper to taste. Toss with shell and vegetables. Turn into serving bowl and garnish with chopped dill and halved cherry tomatoes. Pass the pepper grinder at the table. Serves 6 to 8.
