HOPPIN' JOHN 
1 bag (16 oz.) blackeyed peas
1 c. chopped onion
1 c. rice, uncooked
1 lb. sausage, browned
1/2 green pepper, diced
1/2 red pepper, diced
Salt & pepper to taste

In a large pot, cook peas according to package directions, until 2/3 done. Add remaining ingredients to peas and simmer until peas are tender, about 30 minutes. Add warm water so there is enough "pot-liquor". Serve with cornbread.
