HOPPIN JOHN 
1 lb. blackeyed peas
1/2 lb. bacon
2 med. onions, coarsely chopped
2 c. water
2 tsp. salt
2 pkgs. UNCLE BEN'S® rice boil in bags

Cook blackeyed peas and season. In a large skillet fry bacon; drain. Add onions and cook until soft but not brown. Use crock pot. Add peas, water, salt. Cook rice; drain and add to above. Turn on low and simmer. Add more water as needed.
