SELMA'S BEST OATMEAL COOKIES 
1 c. shortening
1 c. white sugar
1/2 c. brown sugar
1 beaten egg
1 tsp. vanilla
1 1/2 c. flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1 1/2 c. quick-rolled oats
3/4 c. finely crushed walnuts or pecans

Cream together shortening and sugars. Add beaten egg and vanilla. Mix in flour, soda, cinnamon and salt. Add oats, walnuts or pecans. Chill for about an hour.

Put walnut-sized pieces of dough on a lightly greased cookie sheet. Butter the bottom of a small glass, dip in granulated sugar and flatten each piece. Bake at 350 degrees for 10 minutes. Makes about 5 dozen.
