CHEESE CASSEROLE | |
1 box seasoned croutons (cheese/garlic) 2 c. shredded Cheddar cheese 2 lg. onions, chopped 1 med. green pepper, chopped 2 tomatoes, diced 1 c. shredded Monterey Jack cheese with jalapeno peppers 1 c. shredded Monterey Jack cheese 6 eggs, beaten 2 c. milk 1/2 tsp. paprika 1/2 tsp. oregano 1/4 tsp. mustard powder 1/4 tsp. salt Spread croutons in bottom of a buttered 13 x 9 inch pan. Sprinkle Cheddar cheese on top of croutons. Saute onions, green peppers and finally tomatoes in butter and spread over the Cheddar cheese. Sprinkle Monterey cheeses on top. Mix together eggs, milk and all the seasonings. Pour over all. Refrigerate overnight. Bake at 325 degrees for 50 minutes. Let rest 10 minutes before cutting. Option: Substitute 1 pound sausage meat, cooked and drained for vegetables. If you prefer it spicier, use 2 cups Monterey Jack cheese with jalapeno peppers. Great for brunch. |
