SCALLOPED TOMATO CASSEROLE | |
3 1/2 c. peeled, chopped tomatoes 1 c. chopped onion 1/2 c. cheese flavored cracker crumbs 1 1/2 tsp. sugar 1/2 tsp. salt 1 (8 oz.) carton sour cream 1 1/2 c. seasoned croutons 1 tbsp. butter, melted Layer half each of tomatoes, onion, cracker crumbs, sugar and salt in a greased 1 1/2 quart casserole. Repeat with remaining half. Bake at 325 degrees for 20 minutes. Spread sour cream on top; sprinkle with croutons on sour cream. Spoon melted butter on top of croutons. Bake an additional 10 minutes. Yield: 6 servings. |
