CHINESE CHICKEN SALAD | |
3 chicken breasts Ginger, fresh, sliced 4 or 5 green onions, sliced diagonally 1 sm. pkg. slivered or sliced almonds 1/4 c. sesame seeds 4 tbsp. sugar 2 1/2 tsp. salt 1/2 tsp. pepper 4 tbsp. vinegar 1 head iceberg lettuce 1/2 can Chinese noodles (chow mein) 1/2 c. oil 1 1/2 to 2 c. fresh or frozen pea pods (optional) Cook chicken breasts with sliced fresh ginger in water until done. Cool and cut into bite-size pieces. Shred one head of lettuce into bite-size pieces. Slice green onions. Set aside. Lightly brown, over medium heat, almonds and sesame seeds. Watch carefully and stir frequently because they burn easily. Set aside. Combine the sugar, pepper, salt and vinegar and dissolve in a pan over low heat. Cool and add 1/2 cup oil, mixing thoroughly. All ingredients can be prepared in advance. Mix together and add dressing and noodles just before serving. This is a wonderful dish to take to potluck. |
