CHINESE VEGETABLE SALAD 
1 can water chestnuts
1 (16 oz.) can sm. party peas
1 (16 oz.) can green or (yellow wax) beans
1 (16 oz.) can sliced carrots
1 1/2 c. celery, diced
1 green pepper, diced or sliced thinly
1 med. onion, sliced thin

Mix ingredients above with:

1 c. sugar
3/4 c. vinegar
Salt & pepper to taste

Marinade overnight.

NOTE: To stretch, shredded lettuce may be added 1/2 hour before serving. Without lettuce, mixture will keep 2 weeks in refrigerator.
