POOR BOY SUPPER 
1 lb. hamburger
1 sm. potato, peeled and grated
1 sm. onion, peeled and grated
1/2 c. dry bread crumbs
1 egg
1 1/2 tsp. salt
1/8 tsp. pepper
1 can cream of celery soup
1 can milk
1 1/3 c. instant rice

Combine meat, vegetables and bread crumbs. Add egg, salt and pepper. Mix well. Shape into meatballs and brown in skillet with 2 tablespoons oil. Remove to 2 quart casserole. Combine soup, milk and rice, pour over meatballs. Cover. Bake at 350 degrees for 30 minutes. Makes 6 to 8 portions.
