OH, SO EASY BEEF MACARONI
CASSEROLE
 
You can assemble this casserole, in the morning, and refrigerate it, in the evening add tomato slices on top. Bake.

1 lb. ground beef
1/2 c. ketchup
1/4 c. chopped onion
8 oz. elbow macaroni, cooked
1/4 c. chopped pepper, green
1 c. grated American cheese
2 tbsp. melted butter
2 eggs
1/3 c. milk
1 1/2 tsp. salt
2 tsp. prepared mustard
1/2 c. mayonnaise
1/2 c. dry bread crumbs
6 slices tomatoes

Mix beef, eggs, ketchup, milk, onion and salt. Mix macaroni, mustard, green pepper and mayonnaise; spread beef mixture over top; sprinkle with cheese; top with mixture of crumbs and butter. Bake in moderate oven, 350 degrees, 20 minutes; place tomatoes on top and bake longer. Makes 6 servings.
