CAT BURRITOS - YUMMY!
4 chicken breasts
Garlic salt
2 cans cream of mushroom soup
1 sm. can sliced mushrooms
1 sm. ball sized onion, diced
Soy sauce
1 1/2 c. grated Monterey Jack cheese
12 flour tortillas
Black pepper

1. Boil chicken in a covered pot with 2 healthy shakes of garlic salt. Cook for 1/2 hour. Cool chicken for 10 minutes, then pull off the bone and shred the meat with your fingers. Keep the water left in the pan.

2. Take the shredded meat, 1 can of soup, the onion, the mushrooms and 1 cup of the shredded cheese and heat in a saucepan.

3. In another saucepan combine second can of mushroom soup, 1 can your homemade broth, another shake of garlic salt, 1 or 2 capfuls of soy sauce and a dash of pepper. This is your sauce.

4. heat tortillas in a microwave. In a 9 x 13 inch pan, spread a thin layer of sauce. Drop a tortilla into the pan, filling it with filling in step 2. After filling, roll up. Spread remaining filling atop the burritos, then sprinkle the rest of the cheese on top of the burritos. Bake at 350 degrees for about 10 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.

I remember this recipe originally appearing on the back of "Sassy" magazine. So glad to have found it, but this is one that really deserves a credit to the source! Yum, yum, yum.

I still have the original page from the magazine at my moms house. I've made this so many times that I don't need the recipe any more. When I make them, I always add a small can of black sliced olives and a small can of mild diced chilies. Supper yummy. And it freezes really well if you want to pre-make batches of it.
