CEVICHE 
2 pounds halibut... cover with 50-50 lemon juice and lime juice. Set for 10 hours.

Chop: 1 c. green peppers 1 c. tomatoes 1/2 c. mushrooms 1/2 c. black olives 20 lg. green olives

Mix and add: 1/2 c. ketchup 12 oz. tomato juice 1 tsp. Tabasco 1/2 tsp. cilantro 1/2 tsp. sweet basil 1/2 tsp. whole Greek oregano 1/2 tsp. MSG

After all ingredients are mixed cover with celophane, directly covering Ceviche, this prevents drying and maintains color better. This dish is better the longer it sits. Serves 8.
