CEVICHE 
2 lbs. uncooked mild white fish (halibut, snapper, shark, etc.)
1 lg. bottle lemon juice or lime juice
2 onions, chopped
1 bunch cilantro, chopped
1 or 2 tomatoes, chopped
Several cloves garlic, chopped
Jalapeno peppers, chopped
Salt & pepper to taste

Cut fish into bite-sized pieces. Place in a shallow dish and pour lemon or lime juice over - making sure fish is covered. Cover with plastic wrap and refrigerate several hours or overnight. Drain off most of the juice, reserving some to add later if necessary. Toss fish with remaining ingredients, adjusting amounts as needed for your personal taste. Add a little more of drained juice if needed. Serve with crackers. Delicious!
