PLAIN WHITE BREAD 
1 pkg. active dry yeast
2 c. lukewarm water
Pinch of sugar or drop of honey
7 c. unbleached flour
1-2 tbsp. salt
Enough oil to grease mixing bowl & pans

Makes 2 loaves.

Dissolve sugar or honey in 1/2 cup lukewarm water then add yeast and dissolve. Let stand for 5 minutes (if no bubble, use new package of yeast). In bowl mix flour and salt, then mix in yeast, water and sugar and the rest of the water in ingredients list. Mix until dough mix is firm. Turn dough out onto lightly floured surface and lightly flour hands and knead dough for about 10 minutes. Wash and grease bowl. Form dough into ball and place in bowl, turn to grease dough surface, cover with towel and let rise (about 1 to 1 1/2 hours).

After it rises, punch down and knead for 3 to 4 minutes. Divide dough in half and shape into loaves. Place in bread pans (well greased) and let them rise again (about 45 to 75 minutes).

Bake at 400 degrees for 35 minutes. Turn loaves out of pans and return to oven on racks for 5 more minutes to crisp and brown crust.
