PEACH COBBLER | |
4 c. thinly sliced peaches 1/2 c. sugar 1 tsp. cinnamon COBBLER DOUGH: 2 c. sifted flour 3 tsp. baking powder 2 tbsp. sugar 1/2 tsp. salt 1 stick butter 1 egg, beaten 1/2 c. milk Place peaches in buttered baking dish, at least 3 inches deep. Sprinkle with sugar and cinnamon. COBBLER DOUGH: Sift dry ingredients in bowl. Place egg in measuring cup and fill with milk to measure 2/3 cup. Cut butter into flour mixture, for biscuit. Pour milk, egg mixture into flour. Quickly mix. Knead on floured surface only 6-7 turns. Roll part of dough to fit over peaches. Bake at 375 degrees for 30-35 minutes. NOTE: Recipe will make more dough than needed, roll only 1/3 to 1/2 inch thickness. The rest of dough can be used to make shortcakes. Bake at 425 degrees for 20 minutes. |
