APPLE RED CABBAGE 
2 1/2 lbs. red cabbage
2 onions
2 to 3 apples
1/4 c. butter
1/4 c. sugar
1/3 c. red wine vinegar
1 1/2 tsp. salt
1/4 tsp. pepper
1/2 tsp. ground ginger
1/2 c. raisins

Shred cabbage into thin strands (2 quarts). Chop onion fine (1 1/2 cups). Dice apples (2 cups).

In large saucepot melt butter; add onion and cook gently, stirring often, until yellowed and wilted, five to ten minutes. Add sugar and stir until it begins to caramelize. Add cabbage, apples, vinegar, salt, pepper, and ginger. Simmer, covered and stirring occasionally, for 15-20 minutes. Stir in raisins; continue cooking uncovered until cabbage is tender crisp, apples are cooked through and the juices are reduced, about 10 minutes more. May be cooked longer. Makes 6 healthy servings.
