ICE BOX CHEESE CAKE 
8 oz. graham cracker crumbs
1/2 c. melted butter
1 c. boiling water
1 (3 1/2 oz.) pkg. orange flavored gelatin
1 (13 oz.) can evaporated milk
1 (8 oz.) pkg. cream cheese
1 c. sugar
1 tsp. vanilla
1 c. chopped pecans
1 c. crushed pineapple, drained

1. Combine crumbs and butter; mix and place all but 1/2 cup crumbs in bottom of 13"x9"x2" pan.

2. Combine water and gelatin. Stir until gelatin is dissolved. Set aside to cool.

3. Pour milk into ice cube tray. Freeze until small ice crystals form around edges, about 25 to 30 minutes. Pour into mixing bowl and beat until soft peaks form when beaters are pulled up, about 2 minutes.

4. Combine cooled gelatin and cream cheese. Mix until well blended. Beat in sugar and vanilla. Fold in whipped milk, pecans and pineapple. Spoon over crumbs in pan. Sprinkle remaining crumbs on top. Chill for several hours or until firm.
