ORANGE NUT BREAD | |
6 oz. can frozen orange juice concentrate 2 eggs, beaten 4 tbsp. oil 1 tsp. vanilla 4 c. flour 2 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 2 c. sugar 1 c. chopped nuts Preheat oven to 350 degrees. Put frozen orange juice in a 2 cup measuring cup. Fill with boiling water to 2 cups. In mixing bowl, add eggs, oil and vanilla. Mix well. Add flour, baking powder, baking soda, salt and sugar. Mix well. Add thawed orange juice (2 cups) and mix well. Add chopped nuts. Pour into 2 greased loaf pans. Bake at 350 degrees for 55 to 65 minutes or until done. Makes 2 (9 x 5 x 3 inch) loaves. |
