SALMON CROQUETTES 
1 tbsp. butter
4 tbsp. flour
1 tsp. salt
1/8 tsp. pepper
1 c. milk
2 c. salmon, drained
Bread crumbs or cornflake crumbs
1 egg, beaten
1 tbsp. water

Make a cream sauce; put butter in pan and melt. Add flour, salt and pepper. Stir until blended. Remove from heat. Gradually stir in milk. Return to low heat stirring until thick and smooth. Add flaked salmon. Spread in ungreased shallow pan and chill for 3 hours. Roll tablespoonful in crumbs, then in beaten egg and water. Then roll in crumbs again. Fry in deep hot fat or oil.
