DOT'S RHUBARB DESSERT 
3 cups diced rhubarb
1 cup sugar
4 tbsp. (1/2 stick) melted butter
1/2 cup shortening (Crisco)
1 cup sugar
1 egg
1/2 cup milk
1 cup all-purpose flour
1/4 tsp. salt
1 tsp. baking powder

Preheat oven to 350°F.

Place diced rhubarb, sugar and butter in the bottom of 9x9-inch pan.

Cream shortening, sugar and egg. Add milk alternately with flour, salt and baking powder. Pour into pan.

Bake at 350°F for 50 to 60 minutes.

PEACH VARIATION:

4 cups sliced peaches
1 tbsp. lemon juice
1/2 cup sugar
2 tbsp. melted butter

If you would like to make a Peach Dessert with this recipe, substitute the above ingredients and place in the bottom of 9x9-inch pan.

Cover with mixture, as above.
