BANANA CHIP MUFFINS 
1 egg
1/3 c. vegetable oil
3/4 c. sugar
3 medium ripe mashed bananas
2 c. all-purpose flour
chopped walnuts (optional)
1/2 c. old-fashioned oats
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
3/4 c. miniature chocolate chips

In a mixing bowl, beat egg, oil and sugar until smooth. Stir in bananas. Combine dry ingredients; stir into the banana mixture just until moistened. Stir in chocolate chips. Fill greased muffin cups three-fourths full.

Bake at 375°F for 18 to 20 minutes or until muffins test done.

Makes 18 (medium-size) muffins.
