3 c. sliced zucchini
1 med. onion, chopped
1 c. Bisquick
4 eggs, slightly beaten
1/2 c. vegetable oil
1/2 c. grated cheese
Parsley, pepper, garlic powder (to taste)

Grease Pyrex pie pan with Pam, butter. Bake at 350 degrees for approximately 30 minutes or until toothpick isn't really moist. TIP: Before baking, garnish top with mini slices of tomato.
