SHRIMP CASSEROLE 
2 lb. shrimp, cleaned
1 med. bell pepper, chopped fine
1 can Rotel tomatoes and green chili peppers
3/4 c. butter
1 med. onion, chopped fine
1 can cream of chicken soup
2 c. raw rice
Parsley, if desired

Melt butter in large casserole dish. Add remainder of ingredients and mix well. Cover and bake at 350 degrees for 1 hour or until rice is done.
