BANANA NUT BREAD | |
1/2 c. vegetable oil 1 c. sugar 2 eggs, beaten 3 mashed bananas (1 c.) 2 c. flour 1/2 tsp. salt 1 tsp. baking soda 1/2 tsp. baking powder 3 tbsp. buttermilk 1/2 tsp. vanilla 1/2 c. chopped nuts Beat oil and sugar together. Beat in eggs and bananas. Sift dry ingredients and add to banana mixture. Beat in milk and vanilla. Stir in nuts. Pour into a greased 9 x 5 x 3 inch loaf pan. Bake for 1 hour at 350 degrees. (If you have over-ripe bananas on hand, they make a delicious, moist nut bread.) |
