1/2 c. dates, cut in sm. pieces 1/2 c. raisins 1/2 c. prunes, cut in sm. pieces 1 stick butter 2 eggs 1 tsp. baking soda 1 tsp. vanilla 1/4 tsp. salt 1 c. flour 1/2 c. nuts, chopped 1/2 tsp. cinnamon 1/4 tsp. nutmeg Boil dates, raisins and prunes in 1 cup water for 5 minutes. Add butter until melted and set aside to cool. When cool, add eggs, soda, vanilla, salt, flour, nuts and spices. Mix well. Coat a 7 x 11 inch pan with non-stick spray. Pour into pan and bake at 350 degrees for 25 to 30 minutes. Yield 33: Exchanges: 1 bar = 1/2 fruit and 1 fat; Cal: 74; Carb: 8.5 gm; Fat: 4 gm; Protein: 1 gm; Cholesterol: 17 mg. |
