BEEF ROLLS WITH MUSTARD 
1 1/2 lb. flank steak
2 tbsp. prepared mustard
2 med. onions, chopped
6 strips of cooked bacon, finely chopped
Salt & pepper
3 tbsp. bread crumbs
2 1/2 tbsp. flour
1 1/2 tbsp. bacon drippings
1/2 c. water

Cut flank steak into 3 strips widthwise. Pound well. Spread each piece with mustard. Sprinkle with onions, bacon, salt, pepper and bread crumbs. Roll and fasten with a toothpick. Sprinkle with flour.

Brown in bacon drippings. Transfer to a baking dish and add water. Cover and bake at 350 degrees for 1 1/2 hours. Serve with roats or potatoes and dill pickles. Serves 4.
