BEEF WITH RED ONION MUSTARD
VINAIGRETTE
 
1 lb. top round steak
Italian dressing (to marinate steak in)
1 1/2 tbsp. red wine vinegar
1 tbsp. olive oil
2 tbsp. finely chopped red onion
1 tbsp. finely chopped fresh parsley leaves
1 tbsp. Dijon mustard

Marinate the meat overnight in the Italian dressing. Grill to desired tenderness. Let meat rest; wrap in foil. In a bowl, whisk together the vinegar, mustard, and salt and pepper. Add the oil in a stream, whisking until the dressing is emulsified. Stir in the onion and parsley. Slice the steak and serve with dressing drizzled over it.
