SQUASH CASSEROLE 
3 lbs. yellow squash
1/2 c. chopped onion
1/2 c. shredded cheese
1/2 c. crackers, meal, or bread crumbs
2 eggs
1 tbsp. sugar
1 stick butter
1 tsp. salt
1/2 tsp. black pepper

Wash and cut up squash, boil until tender. Drain thoroughly. Mash. Add all ingredients except 1/2 of butter and crackers, meal or bread crumbs. Melt remaining butter. Pour mixture in casserole dish. Spread melted butter over top. Sprinkle with crackers, meal, or bread crumbs. Bake in 375 degree oven for approximately one hour or until brown on top.
