CHEESECAKE WITH SOUR CREAM TOPPING | |
CRUST: About 14 graham crackers, finely crushed 1/4 c. melted butter Combine crackers and butter; pat into 9-inch pie pan. Save a few crumbs for top. FILLING: 4 (3 oz.) pkgs. cream cheese (softened) 2/3 to 3/4 c. sugar 2 eggs, well beaten 2 tsp. vanilla Pinch of salt Mix cream cheese and sugar; add eggs, vanilla, and salt. Pour into pie shell and bake in 375 degree oven on bottom shelf for 20 minutes. When cool (15 minutes), add topping, sprinkle on remaining crumbs. Bake 10 minutes longer. TOPPING: 1 c. sour cream 1 tsp. vanilla 3 tbsp. sugar Pinch of salt When cool, store in refrigerator for at least 5 hours. |
