SPINACH PIE SUPERB 
1 (10 oz.) frozen chopped spinach
1 (3 oz.) pkg. cream cheese, softened
1 c. shredded sharp cheddar cheese
5 eggs, lightly beaten
1/2 tsp. salt
1/4 c. chopped green onion
2 tbsp. chopped parsley
1 unbaked 9 inch pie shell
1 tomato, thinly sliced
1/4 c. grated Parmesan cheese

Cook spinach, drain well. Squeeze all water out and set aside.

Combine cream cheese, cheddar cheese, 1 egg, salt, onion, and parsley. Beat lightly with fork. Stir in spinach and pour into shell. Arrange tomato slices on top and sprinkle with Parmesan cheese. Bake at 450 degrees for 35 minutes or until set. Serves 6-8.
