HOT (SPIKED) CIDER 
1 gal. apple cider
1/2 c. maple syrup
Approximately 1 c. rum, brandy or bourbon - optional
1 stick butter
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. allspice

Heat the apple cider, maple syrup and liquor. Soften (or melt) butter; mix in spices. Chill. Use 1/2 teaspoon (or to taste) per cup of hot cider. Liquor is optional - can be made plain. Cinnamon sticks and peppermint candy canes make a nice addition to each cup.
