CORN SPINACH CASSEROLE 
2 c. frozen corn, rinsed & drained
1 1/2 c. frozen chopped spinach (1 box)
1/2 c. grated Swiss cheese (most white cheeses can be substituted)
2 tbsp. Parmesan cheese
1 c. thin white sauce (1 tbsp. butter, 1 tbsp. flour, 1 c. milk)
Salt & pepper to taste

Rinse and drain corn (there is no need to cook corn). Set aside. Press water from frozen spinach and add to corn. Make white sauce by first melting butter in small saucepan, stir in flour and then 1 cup milk. Stir constantly while sauce thickens, 3 minutes. Add sauce and remaining cheeses to corn and spinach and mix well. Bake in 2 quart casserole for 20 minutes at 350 degrees. This sounds like a strange combination but it is really good.
