OLD FASHIONED PANCAKES 
1 egg
2 egg whites
1 c. skim milk
3 tbsp. corn oil
8 oz. plain low fat yogurt
1/4 c. honey
1 tsp. vanilla
1 1/4 c. flour
1/2 c. fine oat or wheat bran
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt

In a large bowl, beat egg and egg whites with a wire whisk until frothy; beat in milk, corn oil, honey, yogurt and vanilla until blended; add flour, bran, baking powder, baking soda and salt; beat until blended.

For each pancake spoon 3 tablespoons of batter onto hot, lightly greased griddle. Medium heat, turn once.
