DUTCH PANCAKES 
2 eggs
1/2 c. flour
1/2 c. milk
1 tbsp. butter
1/2 c. plain yogurt
1 c. berries (raspberries or strawberries)

Set oven at 425 degrees. Heat empty pie plate in the oven (8 or 9 inch). Melt the butter in the bottom of pie plate. Blend eggs, flour and milk in a blender and pour into the pie plate. Bake 25 minutes. Fill pie shell with 1/2 cup plain yogurt and top with 1 cup mashed berries, raspberries or strawberries. You can sweeten berries with 2 tablespoons apple juice concentrate if you wish.
