Baked Fish Newburg. 1 lb. fish fillet 1/2 lb. lobster, crab, shrimp or sea legs 2 tbsp. butter 2 tbsp. all-purpose flour 1 cup milk 1/4 cup grated Cheddar cheese 2 tbsp. sherry 1/2 tsp. salt (optional) 1/2 cup bread crumbs Cook fish for 10 minutes in salted water and drain. Melt butter in glass (quart measure) in microwave. Stir in flour and milk. Microwave 1 minute and stir. Microwave another minute and stir until thickened. Stir in grated cheese and sherry. Put fish and lobster or other seafood into greased baking dish. Pour white sauce over the fish, season and cover with bread crumbs. Bake at 375°F for 25 to 30 minutes. |
