PORCUPINE MEATBALLS | |
1 lb. ground beef & 1 lb. lean pork (or all beef) 1 beaten egg 1/2 c. milk 2/3 c. rice 1 tsp. salt SAUCE: 2 1/2 c. tomatoes (or juice) 2 1/2 c. water 2 tbsp. chopped onion 1 tsp. salt 1 tsp. basil 1 bay leaf Mix meats; add egg, milk, rice and salt. Form into 1 1/2 inch balls. Brown in a greased frying pan. Combine tomatoes, water, onion, salt, basil and bay leaf; bring to a boil; put meatballs in. Cover; cook slowly for 1 1/2 hours or cook on low in a crockpot until done (5-8 hours). Take bay leaf out before serving. |
