SWEET POTATO SOUFFLE 
4 lg. sweet potatoes
2 eggs
1 c. sugar
1 c. milk
2 c. marshmallows
3/4 stick butter

TOPPING:

3/4 stick butter
1/2 c. chopped nuts
1/2 c. brown sugar
1 c. crushed cornflakes or wheat germ

Rinse potatoes and add eggs, sugar and milk. Mix well. Melt butter and marshmallows in boiler. Add to potato mixture. Stir. Put in greased baking dish and add topping. Heat topping in boiler until butter is melted. Pour over potatoes.
