CHICKEN STRIPS 
1 lb. boned chicken breasts
2 eggs
1 c. chopped walnuts
1 c. herbed bread crumbs
1/2 tsp. salt
1/4 tsp. pepper
1/3 c. oil

Cut chicken breasts into 3 to 4-inch strips. Measure 1 tablespoon oil, save remaining oil for baking. Beat eggs, oil, salt and pepper in small bowl. Mix bread crumbs and walnuts in another bowl. Dip chicken in egg mixture, then crumbs. Place on a baking sheet. Use 1/4 cup of oil to pour around strips, not over strips though. Bake in 425 degree oven for 15 minutes. Serve warm with accompanying dip.
