MEATBALLS SUPREME 
3 slices bread
1/2 c. milk
1 egg, beaten
1 lb. ground beef
3 tbsp. grated onion
3 tsp. salt
1/8 tsp. pepper
Flour
2 tbsp. shortening
1 (8 oz.) can tomato sauce
2 c. water
1/2 c. chopped carrots
1/2 c. chopped celery
1 (10 oz.) pkg. frozen peas
3 tbsp. parsley

Soften bread in milk; add egg. Mix beef, onion, parsley, salt and pepper. Add bread mixture. Form into 18 balls; roll in flour. In electric skillet, brown balls in hot shortening; drain off excess fat. Add tomato sauce, water, carrots, celery and peas. Cover and simmer 45 minutes. Serves 6.
