GOLDEN NUGGET COOKIES 
2 1/2 c. self-rising flour
1/2 tsp. nutmeg (optional)
1 c. shortening
3/4 c. sugar
2 eggs
1 c. shredded carrots
2 c. sifted confectioners sugar
1 tbsp. grated orange rind
3 tbsp. orange juice
1 tbsp. milk

Sift nutmeg with flour. Cream shortening and sugar. Beat in eggs and carrots. Blend in flour. drop by teaspoon onto greased baking sheet.

Bake 8-10 minutes at 400. Cool. ICING: Blend confectioners sugar, orange rind, juice and milk. Cover top of cookie with icing. Store in tight container.
